Alas, I have conquered the Black Bean Brownie recipe!
Here it is:
Ingredients:
•1 can black beans, drained and rinsed
•3 eggs
•3 tablespoons oil
•1/2 cup (or more) cocoa
•1 teaspoon vanilla
•3/4 cup sugar (or sucanut or alternative sugar substitute)
•a pinch of salt
•1 tsp baking powder
Preheat oven to 350* F.
Pour drained beans into a blender, set on puree and blend until smooth. Add in the rest of the ingredients and continue blending until evenly mixed.
Pour bean mixture into a greased 8 by 8 pan. Bake in oven for 30 minutes, or until toothpick placed in the center comes out clean.
Also, I found some exciting twists to the recipe! I have not tried them yet, but here they are:
Chocolate Bean Cake: Same as above except separate eggs. Blend yolks with other ingredients in food processor or blender. Beat whites to stiff peaks. Fold whites into bean mixture. Bake at 350 degrees for 35-40 minutes, until a toothpick inserted in the center comes out clean.
Chocolate peanut butter: add 2 Tbsp. Natural peanut butter to the bean mixture. Sprinkle the top with chopped peanuts if desired.
Chocolate hazelnut: Add 1/4 tsp hazelnut extract to the bean mixture. Sprinkle the top with chopped hazelnuts if desired.
Lemon Ginger: Use canellini beans instead of black beans. Add 1 tsp. lemon extract, 2 tsp. ground ginger and zest of one lemon to bean mixture. Top with sliced almonds.
Cranberry orange: Use canellini beans instead of black beans. Add 1 tsp. orange extract, 2 tsp. ground ginger and zest of one orange to bean mixture. Top with minced dried cranberries.
Cherry almond: Use canellini beans instead of black beans. Add 1 tsp. almond to bean mixture. Top with minced dried cherries and sliced almonds.
Pumpkin: Use canellini beans instead of black beans. Add 1 cup pumpkin puree, 1/4 tsp ground ginger, 2 tsp cinnamon, 1/4 tsp cloves, 1/4 tsp nutmeg and 1/4 tsp salt to bean mixture. Top with chopped pecans.
Apple spice: Use canellini beans instead of black beans. Add 1 cup unsweetened applesauce, 1/4 tsp ground ginger, 2 tsp cinnamon, 1/4 tsp cloves, 1/4 tsp nutmeg and 1/4 tsp salt to bean mixture. Top with chopped walnuts.
